Cut from the top part of the shoulder, our boneless Boston Butt is the star of stews, braises, and fork-tender smoked pulled pork. It cooks long and slow, so put it in the oven in the late morning to have a delicious meal by the evening.

Savory, crispy skin, and al-dente cartilage make heritage pig ears truly unique. Boil them to bring the cartilage to an optimal texture, then sauté with root vegetables and aromatics.
